Luke's Birthday Mousse





We had some friends over to celebrate the big 33 and the talk of the evening (if I do say so myself) was the EASY chocolate mousse I made for a dessert.   I know, I know.   People always say a recipe is "easy" and then they start saying things like "double boiler" and "separate the white from the yolk."   But not this time.   This was TRULY easy. 

And since a blog isn't really a blog until you post a recipe, here goes:

"RESTAURANT QUALITY" (Luke's ultimate food compliment) CHOCOLATE MOUSSE

Serves 8

4 cups of dark chocolate (chips, bars broken up, etc. )
4 eggs
4 teaspoons vanilla
4 cups cream (we get ours raw from local Amish farmers - beats anything in a carton anyday)

Blend the top three ingredients together.  (You may need to do two separate batches or use a food processor as well.)  Heat the cream until small bubbles emerge around the edges, but don't boil.  Then pour into the blender/food processor as it's running and blend until the chocolate is melted, eggs are heated and the mixture is smooth.  Pour into serving cups/bowls, cover and refrigerate until it thickens.  Serve with whipped cream and/or a berry puree.  (I pureed the frozen dark sweet cherries from Trader Joe's and poured it on top.  Amazing.)  Next time we'll do it parfait style.

And be sure to let your kids lick up any leftovers.  They may bounce past their usual bedtime, but they'll love you forever.  I'm telling you - nectar of the gods, people.  Enjoy!
